This Extra Brut is vinified and aged for six months in oak using 30% macerated wine, 60% white wine pressed quickly and 10% red wine for colour. It’s left to rest on the lees for around 24 months before being disgorged by hand. Dry, racy and thirst quenching with flavours of cranberry, red cherry, redcurrant, white pepper.
