During the processing of this meat only the best parts of the pig-thigh, shoulder, belly and loin are used. Traditional methods of preperation are employed giving the product a characteristic identity. The sopressa is aged in a cellar where it acquires a characteristic scent which, when combined with the softness of the dough sweat and added spices, reemphasises its craftsmanship. On slicing the sopressa the slices are compact and homogeneous red for the “lean meat” and white for the fat.

La Casara Roncolato - Roncà

In the hills of Roncà, under the ancient volcano of Calvarina, the story of the Roncato family and their cheese factory was born.

In the 1920s in Brenton, Ermenegildo with his sons Angelo and Romano, began the cheese making business. Verdant pastures that climb up to the highest peaks of the Lessini Mountains, the Little Dolomites of Verona.

Since 1964, the cheese factory has been taken over by Romano and will be called La Casara. This long tradition continues today with their children Giovanni, Gildo and Letizia and has become one of the most qualitatively important and refined realities in the Venetian and Italian production scene.

Giovanni was the real promoter of the rebirth of the Veronese PDO Monte Veronese and above all he tried from the beginning to make young people return to the Veronese mountains to regain possession of the tradition of mountain pastures. Today, La Casara Roncato has won multiple awards in national competitions and offers a wide range of home-made cheeses: vaccines, goats and sheep.

Over time Giovanni has become a refined cheese selector and here we offer you some of them. Casara Roncato also has a pig farm in the lands of Roncà from which the meat that will be used to produce the famous and rare Sopressa di Brenton comes from. Authentic tastes, typicality and genuineness are the fundamental characteristics of this beautiful Italian reality.
